Bruschetta Baked Chicken
Here is a whole meal rolled up into one dish. You get your protein, veggies and and starch with only having to use one baking dish. It is very easy to make and takes virtually no prep time either.
Ingredients:
1 lb. boneless skinless chicken breast
1 can (14-1/2 oz.) diced tomatoes, undrained
1/2 pkg. (6 oz.) Stove Top Stuffing Mix for Chicken (low sodium)
1/4 cup water
2 cloves garlic, minced (or jarred crushed garlic)
1/2 bag of frozen spinach, defrosted
salt and pepper
Preparation:
Preheat oven to 400°F. In a medium mixing bowl, stir together tomatoes (with liquid), stuffing mix, and water until stuffing mix is just moist. Set aside. Season chicken cutlets with salt and pepper and arrange chicken in a single layer in a 13x9 baking dish. Mix garlic into spinach and place evenly on top of chicken pieces. Top again with stuffing mixture. Bake about 30 minutes, until stuffing is browned and chicken is fully cooked. Serve.
