Oven Roasted Red Potatoes

This is a very simple but really delicious easy recipe for oven roasted potatoes.

Ingredients:

1 box of Baby Red Potatoes
1 package of onion soup mix
2 Tablespoons of Olive Oil

Preparation:

Preheat oven to 425 degrees F.  Quarter the potatoes and place in a gallon size ziploc bag.  Pour in olive oil and onion soup mix.  Seal bag and toss potatoes around until completely coated.  Pour poatoes onto a greased cookie sheet and bake in the oven for 45 min to 1 hr until potatoes are crispy and brown.

  2. 10-12 small red potatoes cut into quarters. They weren't the teeny tiny ones...... just average small red potatoes.

  3. Or maybe 15-18 depending on their size....the recipe is super flexible....so it really doesn't matter how many. Sometimes I do a packet and a half of onion soup mix and 3 T of oil if it looks like I have more potatoes than usual. You can adjust this recipe to taste
